Lake Victoria marks the Lake Region of Kenya, connecting 3 East African Countries: Kenya, Uganda, and Tanzania. The beautiful islands and beaches make the experience of chilling outside a hotel room, watching the moon at night, and savoring a nicely made dish of fresh Tilapia the most exotic moment.
Fresh from the lake, Tilapia is seasoned with lemon Juice, dashes of salt, black pepper, and cayenne for those who love it peppery, and the graham Masala to give it a rush of tang. It is then Deep-fried, to a crispy golden brown that can be eaten as it is or further, softened with the wet spices and cream.
To soften it, onions are sauteed, fat juicy tomatoes are added, tomato paste, some crashed pellets of garlic, a spray of vinegar and apple cider, and finally natural yogurt is added to cream it up. The crispy fried fish is then added to the sauce mixture for a few minutes.
Fruit salad or vegetables are prepared to the preference of the guest.
Tilapia is serve with either Ugali, Rice or Chapati. An adult can enjoy a whole Fish, on a rocking boat bar, swinging on the steady waves of Namulolwe.
It is not just the company that you keep, or the sweet slow Dholuo Benga tunes on the Nyatiti, the local guitar or the fresh scent of the Lake. It is the ambience, the dance of fish on the tongue and palate, the warmth and the love that the whole meal is served with by the proud dwellers of the lake.
